Boursin Omelette
Tonight I was late coming home, and I really needed a boost. So I decided that a super quick dinner was in order, and let’s be honest breakfast for dinner is always a good idea.
So I pulled out the three ingredients I needed out of the fridge eggs, butter, and Boursin - the original garlic and fine herb is my favourite.
Boursin is a staple in my house, and has been since well before I was in control of the groceries. When we were kids my parents couldn’t keep it in the fridge, an afternoon snack of Boursin and crackers was the best.
The only difference now is that I have elevated the cracker I put it on.
But for tonight I beat the eggs, put them in a pan on medium heat with a small slice of butter.
I kept the pan moving while slowly cooking the eggs.
Once the eggs were mostly set, I added some cheese and folded the omelette.
I kept it in the pan and let the interior heat through, and the omelette puffed up.
Finally I popped it on the plate, and since I had some parsley out already I chopped it up and added it to the top of the eggs for a little bite and colour.
