Father's Day
A few weeks ago I heard a story that as my parents were dating my Dad used to keep a freezer full of lobster, shipped in by a friend in Nova Scotia, so I thought that we’d treat him with some fresh East Coast lobster this Father’s Day!
Since I didn’t have anyone in the Atlantic provinces that I could call, I did a little googling and found a few sites that allow you to purchase fresh lobster that will be pulled out of the water and arrive at your door 24 hours later. The only snag in my plan was that Saturday delivery wasn’t an option - so the lobsters arrived Thursday morning. It seemed like a waste to have these amazing fresh lobsters and then keep them for a few days just to say we had them on Father’s Day. So I prepped my Dad that we would be celebrating a little early!
We went with yourlobsterpot.ca and I honestly can’t recommend them highly enough - amazing communication and the box of Sea Bugs, as a friend once affectionately called them arrived!
When I ordered them 10lbs seemed like a totally reasonable number… when they arrived I freaked out and spent the next couple of hours trying to cajole some friends into coming all the way out to Niagara to eat them with us! Unsuccessful, I steamed all of the NINE lobsters and served!
We went super simple and served them along side some clarified butter, loads of fresh lemon, and some simple Pain au Lait perfect for soaking up the tomalley (which is know isn’t everyone’s favourite thing but for me it’s lobster pate and I love it!).
Since there is no way that three people could even come close to eating all that I took the remaining lobsters and shelled them, making an amazing lobster stock from the shells (which I rinsed and then boiled with fresh water, a chopped onion, carrot, celery, and some tomato paste before freezing to use down the line - I’m feeling like a seafood risotto is calling my name!). The remain meat I popped into a container for lobster rolls- making this little Father’s day party last all the way till the official day.
I just tossed the chopped up tails and claws with some lemon butter, a little fresh dill, lemon juice, and a squeeze of Kewpie mayo - then served them in the leftover Pain au Lait rolls and some kettle chips!
