Spring has Sprung
The sun is shining. Spring is definitely here.
After an amazing late lunch with a good friend at Terroni on Adelaide I strolled back home soaking in the sun.
To celebrate I mixed up the spring cocktail with some amazing Empress Gin, distilled in BC and inspired by the incredible Empress Hotel in Victoria. The flavour of this gin is delicate, and it is a beautiful violet colour. My favourite thing about this gin is that depending on what you add to it the colour shifts from purple to blue.
I combined it with the floral notes of St Germain and Meyer lemon.
For 2 small cocktails I shook up
50ml Empress Gin
30ml St Germain
Juice of 1 Meyer Lemon
with some ice.
Once it was well mixed and cold I strained it, removed the ice then added 1 egg white and did a dry shake.
Once it was nice and frothy I added it to the glass, twisted a strip of zest on to the foam to release the essential oils.
Then settled on my balcony to enjoy an aperitif in the sun.
